Microgreens are an easy, excellent source of many vitamins and minerals and they provide additional elements that are beneficial to our bodies and health. They are also more nutritionally dense than their full-grown counterparts.
Some of the most common vitamins are A, B (1, 2, 3, 5, 6, and others), C, E, and K. Often-found minerals include calcium, potassium, iron, magnesium, phosphorous, copper, and others.
Microgreens also include groups of healthy elements such as antioxidants, flavonoids, sulfurophane, and carotenoids. Plus, our friends fibre and protein!
What do these different vitamins do for us?
Vitamin A - important for vision, immune function, and cell growth
Vitamin B - essential brain function, cell metabolism, and energy
Vitamin C - antioxidants that support the immune system
